Kyle Reese fell in love with Sarah Conner after hearing so much about her, but the woman he found hadn't been molded yet into the woman that John would have told Kyle so much about. All that growth happened afterwards.

Sarah the waitress wasn't the same person as Sarah the baddass we saw in T2. That's the Sarah that would have made an impression on John.
